The Quixotic Label at ChaLou Wines

I have never believed in making premium wine by volume. Instead, we craft all our wines to harness the specific quality of each season. Occasionally, certain parcels truly stand out – our Quixotic Label is reserved for these small‑batch selections that are simply too good to be blended away. We wanted to capture these exciting expressions and share them with you.
Where the Name Comes From
The name Quixotic is a quiet nod to my dad. He loved Don Quixote — the dreamer and the idealist who saw possibility where others saw limits. In many ways, Dad was a Don Quixote character himself, dreaming of retiring as a GP to make wine alongside my mum.
This label is for the dreamers and for chasing those impossible dreams. We are always pursuing “unicorn” wines and the perfect expression of a season; sometimes, we are lucky enough to find it.
Why We Don’t Make Quixotic Every Year
Quixotic isn’t a program or a wine made to meet a volume target — it has to show itself. The excitement often begins in the vineyard, but it is a long journey from bud to bottle. Every step of our process must respect the quality and translation of the fruit.
The final decision is made while tasting through barrels. If a parcel stands out with its own rhythm and confidence, we consider it for the label. However, we will not release a Quixotic wine if it diminishes the quality of our Estate range. Both wines must show continuity and completion for the selection to be approved.
Because of this, Quixotic will not be made every year — but when it is, it’s something truly special.
Barrel Selection
We vinify in small batches, often in parcels of less than one tonne, to capture the finest details of the vineyard — noting how the southern end of a row differs from the north, or identifying the boney crests versus the deeper soils.
By varying our techniques — adjusting solids, whole‑bunch inclusion, or fermentation temperatures — we craft unique expressions from the same site. As each batch moves to barrel for maturation, it continues to differentiate itself.
We return to taste these barrels throughout their evolution, getting to know their character. While we may feel the potential of a Quixotic wine early on, it all comes down to the final selection at blending.
2025 Quixotic Riesling
Riesling grows beautifully in Orange, NSW, and the 2025 release captures the clarity of the season. It is bright and textural, with natural acidity that carries the wine without intervention. This is a Riesling that didn’t need shaping — just time. Expect citrus, minerality and a clean line from start to finish.
2025 Quixotic Pinot Noir
The 2025 Pinot Noir is gentle, balanced and quietly complex. It features red fruits, fine tannins and a subtle earthiness that anchors it firmly in our region. This wine didn’t need to be pushed; it simply asked to be bottled as it was.
A Label for Wines That Follow Their Own Path
Quixotic is the space we keep for wines that don’t fit neatly into our core styles but deserve to stand alone. These wines are small‑batch, minimal‑intervention and shaped entirely by the season.
