Cattleman’s Cutlet
Simple seasoning and quality meat make for a delicious BBQ treat.
Ingredients
- Good quality Cattleman's cutlet from your local butcher (we love Woodward Street for their great cuts)
- Salt & Pepper
- Cherry oak smoking chips (just a handful)
Directions
- Season the meat with salt and a bit of pepper, and let it come to room temperature before cooking.
- Preheat the Weber to 180°C.
- Place the cutlets on the grill (not directly above the coals) and add a handful of cherry oak smoking chips.
- Place the lid on the Weber with vents open and cook on full heat for 7-10 minutes (7 for rare, 10 for medium).
- Turn the cutlets and close the vents to maintain the temperature.
- Cook for another 7-10 minutes.
- Remove from the Weber and let rest for 5 minutes before cutting.
