Succulent Lamb Koftas
Nadja loves whipping up a batch of koftas. Plus, Nadja and Steve have lots of home grown lamb.
Ingredients
- 500g lamb mince
- ⅓ cup dried currants
- ⅓ cup sunflower seeds
- 1 tbsp chopped sage
- 1 tbsp chopped thyme
- 1 tsp ground coriander seed
- 2 cloves of crushed garlic
- Handful of fresh chopped parsley
- 2 eggs
- Salt & pepper to season
- Zest of one small lemon
Directions
- In a large bowl, combine the lamb mince, garlic, and spices. Add eggs and mix well until all ingredients are evenly distributed.
- Shape the mixture into small sausage-like shapes or balls.
- Thread the koftas onto skewers if desired. Nadja never bothers but can be a handy activity for the kids.
- Grill or bake the koftas at 180°C for about 20 minutes, turning occasionally, until they are cooked through and slightly charred on the outside.
